Get out the Dutch Oven and the Crock Pot because its time to get your Braising game on! Pork Butt gets Leveled Up  in this two day process of brining, rubbing and braising, so plan to start early, then lay back and let the low and slow magic do its thing. These days, I like  it pulled and set atop a Grit Medallion with a little Mild Chili Paste Sauce. But I also enjoy it with pickled red cabbage and a fried egg on a tortilla as well as with traditonal rice and beans. The unctuous goodness knows no boundries. Enjoy!
