My brother Erin loved Italian food. It was a staple in our home and ranged from lasagna, to cannelloni, to my favorite, eggplant parm. The sauce doc’d up from a jar, was good, the cheese always on point, but I really vibed the creamy purple goodness of eggplant, which sautéed on its own, I can eat with just a little seasoning.
As exposure to different cultures grew, so has my knowledge of how to cook it in different ways as well as different varieties. Be it Italian in approach or Asian inspired, Here In My Kitchen no matter how I prepare it, its always made better when served with garlic chips. A fairly simple addition that delivers a bit of “hey now…”
